I love brownies, I love cupcakes, but I also love not getting food all over my face… enter the mini cupcake out of brownie mix!
My brownie mix of choice is the Ghirardelli Triple Chocolate. It is super yummy. I always substitute the oil in cakes or brownies with organic apple sauce, it makes them light and fluffy! However, you have to heavily spray down your pans with cooking spray, because without the oil in the batter, the brownies or cupcakes basically glue to the pan. I used one package of the Ghirardelli brownie mix to make 24 mini cupcakes and baked them at 325 degrees for 15 minutes.
While the cupcakes were baking and cooling, I whipped up some yummy buttercream frosting. Using 3 1/2 cups of confectioner’s sugar, 1 cup of unsalted softened butter, 2 TB of vanilla expert, and a hand mixer, I beat the ingredients together until smooth. I added a little bit of green and yellow food coloring to spruce it up a bit!
The whole effect is a yummy spring time mini brownie cupcake!
